This product is a 95 DE Corn Syrup that has naturally crystallized into a solid form due to exposure to ambient winter temperatures. Originally supplied as a clear, demineralized liquid syrup with a very high dextrose content, it has converted into a dense crystalline mass. The composition remains chemically equivalent to food-grade liquid glucose (high DE syrup) and is functionally similar to dextrose monohydrate.

Store the pail sealed, in a cool, dry environment. Because dextrose is hygroscopic, exposure to air may cause it to absorb moisture and soften over time.
“DE” stands for Dextrose Equivalent, a measure of how completely starch has been converted into sugars. A value of 95 means this syrup is almost fully converted to glucose — very pure and highly fermentable.
